Chocolate Meringue Cake

Its summer time with dinner parties and family gatherings in full swing. The perfect weather to entertain guests and celebrate the sunny outdoors. At times you just need some quick and easy dessert recipes that wow your guests but don’t require hours in the kitchen so that you can fully participate in the event and  enjoy your guests instead of slaving away in the background. This recipe truly has the wow factor and since all the baking is done together in one pan it is quite a quick and easy recipe to follow!

IMG_6243Ingredients:
Nutella Brownies:
Nutella – 1¼ cup
Flour – ½ cup
Eggs – 2 whole

Meringue Layer:
Egg Whites of 2 Eggs
Confectioner’s Sugar – 1 cup

Cream Filling:
Heavy Whipping Cream – 1¼ cup
Confectioner’s Sugar – 2 Tbsp

Handful Almond Flakes

Preheat oven to 355F/180C. Grease and Line either 1 rectangular baking pan 20x30cm in size or 2 identical square baking pans 20×20 cm in size.

Prepare brownie batter by mixing Nutella, Flour and Eggs. Spread the mixture at the base of the baking pan.

Whip 2 egg whites till soft peaks form. slowly add in sugar 1 Tbsp at a time till the sugar dissolves and the mixture becomes glossy. Spread the meringue mixture on top of the brownie batter evenly and sprinkle almond flakes on top. Place it in the oven to bake for 20 minutes.

Whip cream and sugar together till soft peaks form.

Once the cake has cooled down to room temperature, construct the cake in the following sequence of layers. The bottom cake layer will face down and the top cake layer will face upwards. Starting from the top:

 Meringue -> Brownies -> Cream -> Brownies ->Meringue

Dust with some icing sugar and serve!
