Crispy Popcorn Chicken

I had some leftover chicken fillets, so I took inspiration from Onceuponachef and created these delicious, flavoursome, crispy popcorn chicken. I made a huge bowl as an appetizer for our family dinner and the bowl was licked clean within minutes. These popcorn chicken beat Kfc’s by miles in terms of taste and best of all they are made at home so you know exactly whats going in it and eventually into our family’s tummies! You can use this recipe to make Fried Chicken using whole chicken or Chicken Tenders by using chicken fillets cut in strips.

Chicken Breast Fillet Diced or sliced 2 cups or 1 Whole Chicken
Buttermilk 1 cup
Cayenne Pepper 1/4 tsp
Garlic Powder 1/4 tsp
Paprika 1/4 tsp
Salt 1½ tsp

Marinate the chicken and place it in a ziplock bag for at least 4 hours or overnight for the best flavour.

Coating:
Buttermilk 3 Tbsp
Flour 1½ cups
Baking Powder 1 tsp heaped
Salt 1 tsp heaped
Black Pepper 3/4 tsp
Garlic Powder 3/4 tsp
Paprika 3/4 tsp

Mix all dry ingredients together. Add the buttermilk and mix thoroughly with your hands until the mixture is evenly clumpy.

Coat the chicken pieces in the breading mixture and deep fry. When the chicken is immersed in oil, it is hard to tell when becomes perfectly golden brown. It normally turns a bit darker when you drain it out. I recommend taking the chicken out when it turns light golden for best results. Serve the chicken hot and enjoy these deliciously tender yet crispy popcorn chicken!

IMG_5884 IMG_5878 IMG_5885 IMG_5864For those who do not have access to buttermilk. It is extremely easy to make your own at home using two simple ingredients. For this recipe I recommend making 1 and 1/2 cups as it would be just enough for the marination and the coating.

Whole Milk 1½ cups
Distilled White Vinegar or Lemon Juice 1½ tsp

Mix vinegar into the milk and set aside for 5 minutes. After 5 mins the milk would have curdled and turned into Buttermilk ready for you to use.
