Attention! Calling all Chocoholics! Nothing beats a sweet craving like these gooey fudgy choclatey brownies with a hint of salt! This combination of sweet and salty with crunchy pretzels and pecans along with golden caramel is heavenly.
Salted Caramel:
Sugar 1 cup
Light Corn Syrup 2 tbsp
Water 3 tbsp
Butter 1 tbsp
Heavy Whipping Cream 3/4 cup
Vanilla Extract 1 tsp
Sea Salt 1 tsp
Pour sugar, water and corn syrup in a saucepan keep on low medium low heat till the sugar melts and turns amber. Take the pan off the heat and stir in butter, cream and vanilla extract until well combined. Mix in the sea salt.
Gooey Fudgy Brownies:
Butter 2 sticks / 1 cup
Dark Chocolate 125 grams
Milk Chocolate 75 grams
Sugar 1 cup
Brown Sugar 1/2 cup
Eggs 4 whole
Baking Powder 1 tsp
Flour 2/3 cup
Cocoa Powder 3 tbsp
Instant Coffee Granules 1 1/2 tbsp
Pecans 1/2 cup
Preheat oven to 350 F and line baking tin with aluminium foil or parchment paper.
Melt butter, milk chocolate and dark chocolate in microwave for 1 minute and stir until smooth. In a large bowl mix all dry ingredients: flour, sugar, brown sugar, cocoa, coffee and baking powder.
Pour in the melted chocolate and eggs and mix. Fold in the chopped pecans.
Pour batter into the baking pan and spread equally. Top with a layer of pretzels. Drizzle the salted caramel on top and bake for 30-35 minutes. Since the brownies are super fudgy make sure you check the edges of the pan with a skewer to check of the brownies are done as the centre will always be a bit wet.
Once baked the salted caramel merges into the batter giving you a fudgy sticky brownie with pecans and pretzels which is absolutely delicious. You can never stop at one brownie with this one! Everyone come back for more! Drizzle some more salted caramel on top for some extra gooeyness if you like but the brownies are extremely decadent and rich on their own.
