This recipe is definitely comfort food at its finest. It doesn’t take long to prepare and is quite a crowd pleaser at dinner parties. Most of the prep can be done a day in advance so it is a time efficient process.
You start of by cutting 2 cups of breast fillets into strips. The strips should not be too thin, I made 4 strips out of one breast fillet. Hammer the strips to flatten them a little and season them with a pinch of salt and pepper. Set these aside to absorb the seasoning for at least 4 hours or overnight.
Batter:
Egg 1 whole
Flour 3 tbsp
Cornstarch 2 tbsp
Cheddar Cheese 3 tbsp
Parsley 1 tbsp
Salt ½ tsp
Parmesan Cheese 1 tbsp
Black Pepper 1/3 tsp
Mix all ingredients together in a bowl. Before serving, dip the chicken strips in the batter and give it a good coating. Shallow fry it in your oil of choice till golden brown.
Cheese Sauce:
Milk ½ cup
Heavy Cream 1½ tbsp
Cheddar Cheese 1½ tbsp.
Parmesan Cheese 1 tbsp
Salt & Pepper a pinch each
In a small saucepan mix milk and cream together and place it over low heat. Stir in both Cheddar and Parmesan cheese and cook till the sauce thickens. When it reaches the right consistency (sort of like tomato ketchup), season with salt and pepper and its ready to serve. Pour the cheese sauce over the chicken strips right before serving as pouring it too much in advance will make the chicken soggy. Hope you enjoy this recipe as much as we did! Bon Apetit!
