One of my close relative has an upcoming lunch themed around the much-awaited spring season, so I decided to help her out by baking some cupcakes for the event. Considering how Nutella is such a top favourite amongst the majority and how my Nutella Cookies went down so well amongst friends and family, I decided to go down that route again. Most of the nutella filled recipes I found involved cutting a small hole into the cupcake once cooked to fill in the Nutella. However, I personally found those recipes and the method too tedious and complicated to even think about trying out.
During my search I came across this recipe from the much-loved What Katie Ate blog and decided to give it a go with a few changes here and there. The outcome was absolutely delicious. The rich and gooey Nutella surprise just blows your mind and taste buds every time.
So here goes my version of the recipe:
Flour 1 cup
Cocoa ¾ cup
Sugar 2 cups
Butter 1 stick + 5 tablespoons (melted)
Baking Powder 1 teaspoon
I started off with preheating my oven to 350 F and lining my cupcake tin with baking cups. Make sure you put the jar of Nutella in the fridge at this point as the chilled hard texture makes the assembly process much easier.
In a medium bowl, mix eggs and sugar at medium high speed till it becomes light and fluffy.
Using a spatula or a wooden spoon, fold in the cocoa and flour a little at a time till all of it is well incorporated. Add the melted butter and mix for a couple of minutes till the mixture becomes dark and smooth.
Scoop 1 Tablespoon of the mixture into each of the cupcake mould and Add about 1 heaped teaspoon of Nutella in the centre.
Top off with 1 Tablespoon of the cupcake batter.This measurement leaves you with just enough batter to even out any wonky cupcake or fill out on any uncovered Nutella.
Bake for 12-14 minutes till the skewer comes out clear. Make sure you put the skewer in on the sides as the center is filled with Nutella. Cool the cupcakes for 5-10 minutes before serving or decorating.
It is the perfect accompaniment to a relaxing afternoon tea especially in this lovely weather. What I used for decorating these cupcakes is a whole different story and will be coming up on the blog soon! Hope you have a lovely weekend!
